Vanilla ice cream recipe with little fat and Perfecto-X with no added sugar.

Ingredients

755 g whole milk 3,5%
135 g Perfecto X
15 g Perfecto-Binder-X
95 g xylitol
3 g ground vanilla (alternatively 2 vanilla pods)
a pinch of salt
Note
If you don't have ground vanilla, you can also use the pulp of 2 vanilla pods. Bring the pods to the boil and take them out after ripening.

Preparation

Step 1:
Mix all dry ingredients (including the vanilla).
Step 2:
Mix the milk and the dry ingredients and bring everything to the boil, stirring constantly, and let it steep for 10 minutes at a low temperature (ideally 85 ° C). Stir occasionally. Be careful not to burn it!
Step 3:
Let the ice cream mix in the refrigerator for at least 60 minutes.
Step 4:
Now freeze the ice with an ice cream maker or the hand method.
