Very creamy, fruity raspberry avocado sorbet. “Actually” I don't like sorbet, but this combination convinced me.

The avocado provides the fat content and that makes this sorbet incredibly creamy.

The sorbet is very fruity, creamy and completely to my taste.

Preparation

Step 1:
Thaw frozen raspberries in a saucepan at low temperature and then bring to the boil once. This makes the aroma of the raspberries much more intense. Because of the pitting, you will need significantly more raspberries. The amount of raspberries given above relates to raspberries that have already been pitted.
Step 2:
Put the raspberries through a fine sieve and remove the seeds (it is essential to follow this step, because the seeds do not give a good mouthfeel)
Step 3:
Mix the dry ingredients together well
Step 4:
Mash the avocado and lemon juice with a fork
Step 5:
Mix the dry ingredients, water, pitted raspberries and the avocado pulp at the highest level for two minutes
Step 6:
Leave to mature in the refrigerator for at least three hours
Step 7:
Freeze with the ice cream maker or the hand method
Step 8:
Pour the finished ice cream into a freezer and then let it freeze in the freezer at -24 for 18 hours
