Delicious mango ice cream recipe with 50% mango. A nice creamy ice cream recipe that mango lovers will get their money's worth. It is important that you only use beautiful, fully ripe fruits. Which are also really aromatic. This is the only way the mango really comes into its own.

Ingredients

Only with mango
500 g mango (must be very aromatic)
145 g cream 30%
95 g milk 3,5%
50 g lemon juice
120 g Eis-Perfecto
40 g Perfecto-More
10 g Bindemittel-Perfecto
40 g sugar
pinch of salt
With mango & ice cream paste
350 g mango fresh or frozen
200 g milk 3,5%
150 g cream 30%
135 g Eis-Perfecto
15 g Bindemittel-Perfecto
50 g sugar
50 g mango ice cream paste Movito
3 g citric acid
pinch of salt

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, mango, lemon juice & ice cream paste (depending on the variant) and the dry ingredients together at the highest level for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Freeze the ice with an ice cream maker or the hand method.

Made the ice cream with frozen mangoes (without additives). The frozen fruits were more aromatic than any freshly bought fruit and the ice cream was eaten in no time. Favorite ice cream potential!
