Watermelon fruit ice cream for kids - ice cream fun for young and old

The idea for this watermelon fruit ice cream for kids came from the “Schöller Pirulo Watermelon”. My children think this ice cream on a stick is great and love eating it. I thought we could get a similar ice cream creation with Perfecto but also there myself. A little brainstorming with myself and the ice cream creation came down on paper. The basic basis is a watermelon fruit ice cream (sorbet) in which I have a WoodruffVariegato Whirlpool. The melon kernels are made from a chocolate glaze with a high chocolate content.

Ice cream just for kids?

No of course not. Since the basis is a really good and balanced watermelon sorbet, you can of course also make the ice cream very puristic. Simply add the woodruffVariegato and leave out the chocolate icing. You already have a really great watermelon fruit ice cream for kids and adults alike! Nevertheless, the colorful kids version is also a really delicious combination that we big ones can also taste good. The slightly bitter note of the dark chocolate is an excellent contrast to the sweet watermelon.

Ingredients

720 g watermelon pitted
70 g Sorbet-Perfecto
50 g Perfecto-Minus
17 g Bindemittel-Perfecto
140 g sugar
3 g citric acid
Optional 2,5g cremosa paste or 4g natura cremosa
with watermelon ice cream paste
85 g Sorbet-Perfecto
15 g binderPerfecto
190 g sugar
605 g of water
90 g watermelon ICE PASTE Movito
5 g Perfecto-Cremosa
10 g neutral vegetable oil (e.g. rapeseed)
sugar-free
720 g watermelon pitted
30 g of water
150 g Perfecto-X
17g XBindemittel-Perfecto
80 g xylitol
3 g citric acid
Optional 2,5g cremosa paste or 4g natura cremosa
Ingredients later in the ice cream
approx. 200 g woodruffVariegato
50 g chocolate glaze drops (made from 85g dark chocolate and 15g coconut oil)

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the dry ingredients together with the pitted watermelon on the highest setting for 2 minutes.
Step 3:
Let the mix mature in the refrigerator for at least 2 hours and mix vigorously 2-3 times briefly.
Step 4:
Now freeze the ice with an ice cream maker or the hand method.
Step 5:
Just before the ice cream is ready, add the chocolate chips and stir in.
Step 6:
Now fill the finished ice cream in layers into a container and between each layer that Variegato spread and swirl gently with a spoon.
Boarding with ice paste
Step 1:

Mix all dry ingredients
Step 2:
Mix the water, sugar, ice cream paste, oil, cremosa and the dry ingredients together at the highest level for 2 minutes.
Step 3:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 4:
Now freeze the ice with an ice cream maker or the hand method.
Preparation of chocolate icing drops
Step 1:
The chocolate icing as in Recepies Prepare and squirt small drops from a squeeze bottle or similar onto baking paper. Put these in the freezer to harden. Since the drops melt quickly, they should come directly into the ice after freezing and not remain at room temperature.
