The combination of the creamy white chocolate ice cream, layered with the cream caramel sauce and then pepped up with sea salt is a dream. Also for not so big caramel fans.
First I made the caramel cream and mixed some with sea salt. For my ice cream I only needed part of a small bowl because I made 1,5l chocolate ice cream and most of it with blueberryvariegato have mixed.
This ice cream was a test and the amount of salt used was very discreet.
Proceed as follows for the ice cream:
Mix all dry ingredients.
Heat the white couverture with the milk and condensed milk until it is completely melted.
Add the dry ingredients and mix everything together at the highest level for 2 minutes.
Let the mix mature in the refrigerator for at least 60 minutes.
Freeze the ice with an ice maker.
I only layer the caramel sauce when I pour it into the ice cream container.
If you like, you can put some sauce on the plate or over the ice cream when serving.
