Zabaglione ice cream

Delicious zabaione ice cream based on the classic Italian dessert "zabaione". A raspberry also goes wonderfully with the ice creamVariegato.

#Tip#

Ingredients

115 g Eis-Perfecto
15 g binder Pefecto
65 g sugar
555 g milk 3,5%
100 g cream 30%
100 g Mascarpone
50 g Zabaglione ICEPASTE Movito
pinch of salt
Optional 5 g cremosa paste Perfecto

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, ice cream and dry ingredients together on the highest setting for 2 minutes.
Step 3:
Now add the cream and mascarpone and mix again briefly.
Step 4:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Freeze the ice with an ice cream maker or the hand method.

Zabaglione is my favorite flavor of ice cream…. but I don't like it when there's raw egg in there somewhere... like Christmas and Easter on a day when finally this amazing paste was in the shop!! What can I say...it's divine and tastes like it's from an ice cream parlour!!!! Dear Andreas... a thousand thanks!!!!

I was a bit scared because I only knew zabaglione as a pudding variant and was very disappointed. I still dared. It tastes absolutely delicious and is a great combination with fruits like raspberries, grapes and strawberries!
