Zabaione ice cream

Delicious ice cream with marsala liqueur. The ice cream is modeled on the Italian dessert zabaione.

Ingredients

120 g Eis-Perfecto
100 g egg yolks fresh
a pinch of salt
80 g sugar
10 g Perfecto binder
430 g whole milk 3,5%
180 g cream 30%
80 g Marsala liqueur

Preparation

Step 1:
Mix the dry ingredients
Step 2:
Mix with the milk and egg yolk for 2 minutes at the highest level
Step 3:
Briefly stir in the cream and heat to 10 degrees for 85 minutes
Step 4:
Stir in the Marsala liqueur and chill for at least 1 hour
Step 5:
Then stir again well and put in the ice cream maker
