A friend loves miso and wanted an ice cream recipe with it. I guess I could change the ratio of miso to tahini for them, that's enough for me.

I still have an espresso liqueur Variegato rolled in because I still had something left and could well imagine it all together. I think it's great, but you have to like it.

Ingredients

120g Perfecto More
15g Bindemittel-Perfecto
430g coconut drink
100g coconut milk 88%
150g Philadelphia cream cheese
85g agave syrup
40g miso paste
60g tahini
Optional 5g cremosa
Ingredients Sesame brittle
5 tablespoons sesame seeds
5 tablespoons brown sugar
1 - 2 tsp butter

Preparation

Step 1:
Dissolve miso and tahini in warm coconut milk.
Step 2:
Allow to cool and mix with the remaining ingredients.
Step 3:
Let it sit in the fridge overnight.
Step 4:
Optionally add cremosa.
Preparation of sesame brittle
Step 1:

Roast the sesame seeds, then caramelize with sugar and butter.

Very interesting taste, nice consistency and the sesame brittle is really tasty. I also added black sesame seeds for the eye 😉
