455 g milk 3,5%
150 g Mascarpone
200 g cream
105 g Perfecto-More
15 g Bindemittel-Perfecto
75 g sugar
a pinch of salt

Preparation

Step 1:
Mix all dry ingredients.
Step 2:

Mix the milk, mascarpone and dry ingredients together on the highest setting for 2 minutes.
Step 3:

Now add the cream and mix again briefly.
Step 4:

Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Now freeze the ice with an ice cream maker or the hand method.

a really delicious recipe, I modified this because I had too much mint syrup. I simmered the milk with 1 stalk each of my pineapple, Thai, Moroccan, Turkish, verveineminze and gold balm, let it cool and then processed the ice cream according to the recipe. With self-made chocolate sauce. It's a subtle mint taste.
