I pureed it in the multi of the Kenwood food processor, it tastes delicious, but it could be even finer.
Next time I'll run it through the slow juicer too.
Milk-based cantaloupe melon ice cream
I pureed it in the multi of the Kenwood food processor, it tastes delicious, but it could be even finer.
Next time I'll run it through the slow juicer too.
Mix dry ingredients
Mix with milk and condensed milk on the highest setting, heat to 85 °, cool
Add the melon puree and lemon juice, mix well.
Then stir in the cream, mix briefly
Let ripen in the refrigerator for 3-6 hours
Mix, freeze
Possibly with Variegato layers.
Mix all dry ingredients and bring to the boil together with the pureed fruits and lemon juice for approx. 1-2 minutes.
