Just the scent of blooming elderberry in spring is a pleasure. In this ice cream we use the great aromas of the flower and pack the taste in a wonderful cream ice cream!

Ingredients

510g whole milk 3,5%
143g cream 30%
102g condensed milk
143g Eis-Perfecto
15g Bindemittel-Perfecto
87g sugar
elderflower

Preparation

Step 1:
Bring 600g whole milk to the boil and then let as much elderflower as possible (should be covered by the milk) soak in it overnight.
Step 2:
Strain the next day. There must be 510g of elderberry milk left. If something is missing, make up the difference with milk.
Step 3:
Mix all dry ingredients.
Step 4:
Mix the milk, condensed milk and dry ingredients together for at least 2 minutes.
Step 5:
Now add the cream and mix again briefly.

Let the mix mature in the refrigerator for at least an hour.
Step 6:
Now prepare the ice cream in the ice cream machine or with the hand mixer method.
Step 7:
For a more intense taste, an elderflowerVariegato to be layered. The recipe from the woodruffVariegato Make 1: 1 with elderflower syrup.
