I tried the redcurrant varigato over the weekend (using my own berries). Since we don't like the small seeds, I pureed the fruit and then processed it further.
Buttermilk ice cream was served with it.
It tastes delicious and is very suitable as a sauce/topping. It's less suitable for swirling into ice cream, as the varigato becomes watery/crystalline after freezing, resulting in an unpleasant mouthfeel.
