The idea of creating this ice cream came when we tried these ingredients in a cocktail.
Hazelnut liqueur with cane sugar and lime.
The very intense hazelnut taste combined with the tart-sour lime is a special kind of taste.
many of you are now thinking “Oh God, never!”…..but be brave and try.
If you don't want to buy the liqueur "Frangelico", which is perhaps a bit expensive, especially for the ice cream, the ice cream should also be enjoyable without alcohol.
The hazelnut ice cream recipe with the hazelnut paste and a lime Variegato, are already in the portal.

With the addition of the liqueur, the hazelnut flavor is significantly intensified.

Ingredients

140 g Eis Perfecto
15 g Bindemittel Perfecto
60 g br. cane sugar
a pinch of salt
575 g milk 3,5%
100 g condensed milk 10%
30 g maple syrup
80 g Movito hazelnut paste
20 g hazelnut liqueur / Frangelino
1 pinch cremosa
Ingredients limes Variegato
120 g lime juice
80 g Variegato Perfecto
45 - 50 g br. Cane sugar (I like it sour, so I used 45g cane sugar)
Toppings
Optionally, caramelize any amount of hazelnuts in the pan with a little butter and sugar

Preparation

Step 1:
Mix all dry ingredients
Step 2:

Add the milk, condensed milk, hazelnut paste and maple syrup and mix at the highest level for at least 2 minutes
Step 3:

Add the liqueur (Frangelino) and Cremosa and mix vigorously again
Step 4:

Let the finished ice cream base mature in the fridge for at least 1-2 hours
Step 5:

Pour the base into the ice cream maker or freeze using the hand stir method

Step 1:

Squeeze limes
Step 2:

Heat the juice in the pot or TM or similar and stir it in Variegato Add the powder, bring to the boil briefly and remove from the heat
Step 3:

Pour into clean screw-top jars while still hot and close immediately, set aside until further processing
Step 4:

The finished ice cream alternates with the cooled one Variegato Any amount, layer and finally strudel with a fork
Step 5:

Eat option, sprinkle with caramelized hazelnuts.
