Wonderfully creamy, slightly acidic ice cream with a subtle bitter note.

The citrus fruit bergamot is the fruit of the bergamot tree, a hybrid of lime and bitter orange. The sour, fresh taste nuances of the fruit combined with a slight bitter note are reminiscent of southern countries with sunshine and space.

The basis for my test ice cream was Bergamot puree 100% from Ponthier. It is worthwhile with all providers to test the juice a little before processing to see whether it is right for you. The bitter notes of bergamot are very different, depending on the provider, but also batch.

Greek yogurt and a little cream ensure the creaminess and round off the taste perfectly.
