Chocolate sauce

Chocolate sauce recipe for ice cream and desserts.

Ingredients

105g cream 30%
85g milk
50g water
120g sugar
10g vanilla sugar
50g Sorbet-Perfecto
50g cocoa powder
25g dark couverture 70%

Preparation

Step 1:
Bring all ingredients to the boil in a saucepan for 1-2 minutes and simmer for 10 minutes over low heat.
Step 2:
The chocolate sauce must be completely cooled in the refrigerator before it can be used in the ice cream.
