This ice cream was created on a whim.

I still had Pingui in the fridge and was wondering how best to turn it all into ice cream.

I sat down at the balancer and started “tinkering” and the result was an ice cream that my whole family and also my test-my-ice-cream friend 😉 enjoyed.

Ingredients

Ingredients ice cream base
90g Eis Perfecto
70g Perfecto Plus
15g Bindemittel Perfecto
25g sugar
a pinch of salt
485g whole milk 3,5%
60g condensed milk 10%
120g Pinqui (approx. 4 bars)
5g Perfecto Stracciatella paste
130g cream 30%
Ingredients Variegato
60g whole milk 3,5%
50g Variegato Perfecto
8g Bindemittel Perfecto
a pinch of salt
100g Nutella
25g of 85% chocolate
30g rapeseed oil

Preparation

Preparation of the ice cream base
Step 1:

Weigh dry ingredients, mix and set aside
Step 2:
Weigh out the milk, condensed milk and stracciatella paste and mix together with the pinquis in a tall container. (If you want a lighter ice cream, you can thinly cut the chocolate icing from the pinquis beforehand and later to the Variegato Mix)
Step 3:
Add dry ingredients to the milk mix and mix well for approx. 2 minutes
Step 4:
Finally mix in the cream briefly
Step 5:
Let the ice base mature in the refrigerator for about 60 minutes
Step 6:
Freeze the ice cream mass in an ice cream maker or by hand
Step 7:
Variegato Swirl in and let freeze for 24 hours.
Preparation Variegato
Step 1:

Variegato best to prepare a day in advance so that it is well chilled.
Step 2:
Milk, Variegato Perfecto, Bindemittel Perfecto and salt mix together and heat on a low flame ...
Step 3:
Chop the chocolate and let it melt together with the Nutella in the warm milk. (In this step, the chocolate icing from the Pinqui could also be melted) ...
Step 4:
Let everything simmer briefly and put in a bowl ...
Step 5:
Mix the mixture with the oil until smooth. If it is still a little too thick, you can add a little more oil ...
Step 6:
Let the mixture cool down well and after the ice has frozen, pour it in layers.
