My heart beats higher with this mango passion fruit sorbet. This great sorbet recipe is one of my absolute sorbet favorites in the warm months. It's sensationally creamy. But also super fruity and exotic. The combination of mango and passion fruit is simply super delicious as a sorbet. The sorbet recipe is very easy and quick to make. It always works. It is important that only properly ripe fruits are processed. But TK fresh can be used very well in this recipe.

Ingredients

250 g mango (fresh or frozen)
285 g of water
200 g passion fruit (fresh or frozen / alternatively passion fruit works)
145 g sugar
105 g Sorbet-Perfecto
15 g Bindemittel-Perfecto
a pinch of salt

Preparation

Step 1:
Hollow out the passion fruit, puree and strain off the stones (seven). (This is not necessary with frozen passion fruit)
Step 2:
Peel and core the mango (this is not necessary with frozen mango).
Step 3:
Mix all dry ingredients.
Step 4:
Mix 250 g mango with 200 g passion fruit and water.
Step 5:
Add the dry ingredients and mix everything at the highest level for 2 minutes.
Step 6:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 7:
Now freeze the ice with an ice cream maker or the hand method.
Tip
Step 1:
If you want, you can add a few passion fruit stones to the sorbet for the look.
