Fruity milk-based apricot ice cream with a higher proportion of fruit, thanks to which Variegato the fruit taste becomes even more intense.

Ingredients

Ingredients ice cream:
510 g apricots (fresh or frozen) - weighed pitted and pureed!
20 g lemon juice
110 g whole milk 3,5%
115 g Eis-Perfecto
55g perfecto minus
15 g Bindemittel-Perfecto,
35 g sugar
a pinch of salt
140g cream 30% (32% or 36%)
Ingredients Variegatro:
75g apricots, deseeded, weighed pureed
10g lemon juice
pinch of salt
20-25g raw sugar
25g Variegato perfecto

Preparation

Step 1:
Mix dry ingredients with milk, mix at the highest level, heat to 85 °, hold for a few seconds, cool slightly.
Step 2:
Add apricot puree and lemon juice, mix again vigorously.
Step 3:
Only now add the cream and mix again briefly.
Step 4:
Leave to mature in the refrigerator for 3-6 hours
Step 5:
Mix briefly, freeze.
Step 6:
With cold Variegato Layer in the ice bucket and freeze in the freezer for approx. 24 hours.
Step 7:
Froster should not have more than -18 °.
Preparation Variegato
Step 1:

Mix all dry ingredients and bring to the boil together with the pureed fruits and lemon juice for approx. 1-2 minutes.
Step 2:
Fill into the sterilized glass while it is still hot, close immediately.
