Delicious and creamy plum cake ice cream recipe. Cake meets ice in this ice cream recipe. Because I combine a delicious plum cake with a creamy ice cream. On the one hand we have the delicious ice cream and on the other hand plums and pastries. So there are certainly no ice cream wishes left unfulfilled.

Ingredients

370 g pits (plums)
200 g whole milk 3,5%
150 g cream 30%
20 g lemon juice
105 g Eis-Perfecto
60 g Perfecto-More
15 g Bindemittel-Perfecto
60 g sugar
20 g vanilla sugar
1 tbsp cinnamon
a pinch of salt
Ingredients that are later added to the ice cream
390 g plums -Variegato
90 g shortbread (butter biscuits work as an alternative)

Preparation

Step 1:
Bring the plums (pitted) to the boil with the lemon juice, sugar & vanilla sugar (ideally 85 ° C). Stir occasionally. Be careful not to burn it!
Step 2:
Add the milk and the remaining dry ingredients and mix everything together on the highest setting for 2 minutes
Step 3:
Now add the cream and mix again briefly
Step 4:
Cool down in a water bath
Step 5:
Let the mix mature in the refrigerator for 60 minutes
Step 6:
Freeze the ice with an ice cream maker or the hand method
Step 7:
Just before the ice cream is ready, add the shortbread pieces and stir in.
Step 8:
Now fill the finished ice cream in layers into a container and place between each layer of plumVariegato distribute and if you like, you can carefully mix everything with a spoon at the end.
