Ingredients

135g milk 3,5%
100g cream 30%
385g sour cream
480g apricot puree (e.g. from Ponthier)
65g Perfecto Plus
15g Bindemittel-Perfecto
110g Eis-Perfecto
65g sugar
a pinch of salt

Preparation

Step 1:
Mix the ingredients
Step 2:

Except for the cream, mix everything for 2 minutes
Step 3:

Now add the cream and mix again
Step 4:

Allow to mature for 60 minutes, then freeze with an ice cream maker or hand method
