Mix all dry ingredients.
Roughly chop the children's chocolate.
Mix the milk and dry ingredients together on the highest setting for 2 minutes.
Now add the children's chocolate and let it steep for 10 minutes at a low temperature (ideally 85 ° C), stirring constantly. Stir occasionally. Be careful not to burn it!
Let the ice cream mix in the refrigerator for at least 1 hours.
Now freeze the ice cream with an ice cream machine or the hand method and shortly before the end add the 100g finely chopped children's chocolate and mix in.

Hallo,
your concern with the children's bar ice cream sounds unusual. The recipes are designed so that the specified amounts of sugar provide both the flavor and texture of the ice cream. Therefore, there is no need to reduce the sugar as this usually results in a firmer, less creamy ice cream.
The phenomenon you describe, that the ice is very soft and bubbles, could indicate that the ice is not completely frozen. Please check your freezer temperature; it should be at least -18°C. Measure the ice temperature with a stick thermometer. If the temperature is higher, the ice cannot freeze properly and remains soft, which in turn can lead to blistering.
