Ingredients

20 g butter
20 g egg yolks
20 g honey
50 g sugar
570 g whole me 3,5%
150 g cream 30%
15 g of homemade vanilla paste
140 g Eis-Perfecto
15 g Bindemittel-Perfecto

Preparation

Step 1:
Mix all dry ingredients
Step 2:
Mix the milk, egg yolk, vanilla paste, honey and the dry ingredients together at the highest level for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:
Now add the butter and bring everything to the boil while stirring constantly and let it steep for 10 minutes at a low temperature (ideally 85 ° C). Stir occasionally. Be careful not to burn it!
Step 5:
Let the ice cream mix in the refrigerator for at least 60 minutes.
Step 6:
Now freeze the ice with an ice cream maker or the hand method.
Step 7:
Now fill the finished ice cream in layers into a container and place between each almondVariegato layers.

This ice cream is our long-time favorite. It is a little more complicated to make than other ice cream flavors, but it is worth it! Our guests love it!
