Before I made my own ice cream, I liked to eat magnum almond ice cream. Surely you know the “Magnum” ice cream. The "Magnum Mandeleis" ice cream is a Eis am stiel and I always found the “Magnum Mandeleis” ice cream very tasty back then. It used to be a different combination than the boring ice cream from the supermarket. And I always liked this combination of vanilla ice cream, milk chocolate and slivers of almonds in the "Magnum" ice cream. As I said – before, when I had no idea how good ice cream can really taste.

Ice cream like Magnum Almond to roll

When I was recently out and about with my family, I ate a “Magnum Mandeleis” ice cream again after years. I have to tell you I was quite disappointed. The "Magnum Almondeis" ice cream wasn't particularly creamy and the taste didn't knock me out of my seat. So I thought you could do better than that. I wanted to create a delicious, creamy and slightly vanilla "Magnum Almond Ice Cream" myself. But not as a popsicle, it should be a ball of ice cream. And so I put my plan into action and can now introduce you to an ice cream that I called ice cream like “Magnum Almond”. I have ours for the vanilla ice cream Premium vanilla paste used, but this is not a must! You can use any vanilla paste you want. The only important thing for this ice cream is that it doesn't become too intense from the vanilla taste, it should be similar to the original, only better ;-). It is therefore best to taste it so that it gets a slight vanilla note.

With homemade milk chocolate glaze

The vanilla ice cream comes with a milk chocolate glaze with almond slivers. The milk chocolate icing with almond slivers is prepared separately, just like we know it from the chocolate chips. But so that the milk chocolate really comes into its own in the ice cream, I don't just use chocolate, I combine the chocolate with a tasteless coconut oil. This gives the chocolate a different melting point and gives it a real chocolaty taste in the ice cream. Without coconut oil, the taste of the chocolate in the ice cream doesn't really come into its own. You can find the recipe among ours Chocolate chips

Try it yourself and create your ice cream like "Magnum Almond". It tastes so delicious, is creamy and just right for all Magnum almond ice cream fans. And the great thing is that it is super easy to prepare.

Ingredients

125 g Eis-Perfecto
15 g Bindemittel-Perfecto
80 g sugar
465 g milk 3,5%
300 g cream 30%
15 g vanilla paste
OPTIONAL 5g Perfecto-Cremosa
Ingredients for milk chocolate chips with almond slivers
130 g milk chocolate or milk couverture
20 g neutral coconut oil (deodorized)
20 g almond slivers
Variant without sugar
125 g Perfecto-X
15g XBindemittel-Perfecto
80 g xylitol
465 g milk 3,5%
300 g cream 30%
15 g vanilla paste
OPTIONAL 5g Perfecto-Cremosa

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, vanilla paste and dry ingredients together on high for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:

Let the mix mature in the refrigerator for at least 60 minutes.
Step 5:
Now freeze the ice cream with an ice cream machine or the manual method and just before the ice cream is ready, add the milk chocolate chips and stir in briefly.
Preparation milk chocolate chips with almond slivers
Step 1:

Melt the chocolate and coconut oil in a saucepan over low heat, add the slivers of almonds and allow to cool slightly.
Step 2:

Place on a sheet of baking paper and place a second piece of baking paper on top, and smooth everything out with your hand so that the chocolate / couverture is evenly distributed. (Be careful not to spread too thinly)
Step 3:

Now roll up the parchment paper and leave to cool in the fridge.
Step 4:
When winding up, the chocolate breaks into large pieces. Use quickly or refrigerate again as the chips melt quickly.
