A very tasty and creamy vanilla ice cream without sugar with red fruit jelly. The ice cream is very nice and creamy and, as always, is made quickly for us. The red fruit jelly goes perfectly with this delicious vanilla ice cream. The nice thing is, of course, that we don't use sugar in this ice cream recipe.

Red fruit jelly Variegato sugar-free

Ingredients

585 g whole milk 3,5%
200 g cream 30%
110 g Perfecto X
15 g Perfecto-Binder-X
90 g xylitol
2 g ground vanilla (alternatively 1 vanilla pods)
a pinch of salt
Ingredients that are later added to the ice cream
approx. 250 g red fruit jelly Variegato sugar-free
Note
If you don't have ground vanilla, you can also use the pulp of 1 vanilla pods. Bring the pods to the boil and take them out after ripening.

Preparation

Step 1:
Mix all dry ingredients (including the vanilla).
Step 2:
Mix the milk, cream and the dry ingredients and bring everything to the boil, stirring constantly, and let it steep for 10 minutes at a low temperature (ideally 85 ° C). Stir occasionally. Be careful not to burn it!
Step 3:
Let the ice cream mix in the refrigerator for at least 60 minutes.
Step 4:
Now freeze the ice with an ice cream maker or the hand method.
Step 5:
Now fill the finished ice cream in layers into a container and between each layer that Variegato spread out
