Vegan chocolate brownie ice cream

I am very happy to introduce you to our first vegan ice cream. Some time ago I switched my diet to vegan. Since I didn't want to do without my favorite ice cream flavors, I turned to Andreas Thomä. We worked on the recipe for this ice cream together and, in my opinion, it has been a complete success. Give it a try !

Ingredients

Ingredients for ice cream
150g Sorbet-Perfecto
15g Bindemittel-Perfecto
1 pr salt
90g sugar
40g cocoa
30g dark chocolate vegan
535g soy drink
140g soy cream / whipped cream / soy cooking cream
Ingredients for vegan brownies
1/2 ripe avocado
60ml Alba oil (rapeseed oil with butter flavor) / or neutral vegetable oil
120g whole wheat flour
60g unsweetened cocoa powder / baking cocoa
110g sugar
55g cane sugar
1 teaspoon baking soda
¼ tsp salt and freshly ground pepper, plus more to taste
175ml water
2tsp apple cider vinegar
85g dark chocolate vegan

Preparation

Preparation for brownies
Step 1:
Chop the dark chocolate into small pieces
Step 2:
preheat the oven to 180 ° C
Step 3:
Line a small baking sheet (approx. 30x 20cm) with baking paper
Step 4:
Mash the avocado with a fork and mix with the oil
Step 5:
Add the flour, cocoa powder, both types of sugar, baking soda, salt, water and vinegar and mix until the dough is smooth
Step 6:
Finally add the chopped chocolate
Step 7:
Spread the dough on the prepared tray
Step 8:
Bake for 15-20 minutes and in between use a toothpick to test the "gluing".
Step 9:
the dough should no longer be runny, but it should definitely not be too dry either
Step 10:
Let the finished brownies cool down and cut into small cubes
Step 11:
Drizzle with approx. 100ml sugar syrup and place in the freezer for a few hours
Step 12:
Making ice cream
Step 1:
Sorbet-Perfecto, Salt, sugar and Bindemittel-Perfecto the mischi
Step 2:
Briefly bring the soy drink, cocoa and dark chocolate to the boil, stirring until the chocolate has melted
Step 3:
Mix dry ingredients with soy-cocoa-chocolate drink in the food processor on the highest setting for about 2 minutes
Step 4:
add the soy cream and mix again briefly
Step 5:
Let the mixture steep in the refrigerator for an hour
Step 6:
Layer the ice cream with the brownie pieces in a tin and freeze overnight
