Creamy walnut ice cream with crunch à la Andreas Thomä in the version without added sugar, with Perfexto-X.
Because of the taste, maple syrup was allowed ? stay inside

For the ice cream you need walnut paste.

And for the crunch, caramelized walnuts (I caramelized with erythritol):

Ingredients

Ingredients that are later added to the ice cream
75 g caramelized chopped walnuts
Ingredients for the ice cream mass
70 g xylitol
100 g Perfecto-X
15g XPerfecto binder
50 g maple syrup
590 g whole milk
100 g cream 30%
75 g walnut paste

Preparation

Step 1:
Mix all dry ingredients
Step 2:

Mix the maple syrup, milk, walnut paste and the dry ingredients together on the highest setting for 2 minutes
Step 3:

Let the mix mature in the refrigerator for at least 30 minutes
Step 4:
Freeze the ice cream with an ice cream maker or the hand method and just before the ice cream is done add the caramelized walnuts and stir in
