The recipe is a new, improved version of my delicious baked apple ice cream. Although the previous recipe was very good, I wanted to optimize it with condensed milk. So this time the baked apple ice cream is made with condensed milk and vanilla paste. This makes the ice cream even creamier.

Ingredients

400 g whole milk 3,5%
200 g Boskoop apples (others do too)
100 g condensed milk 10%
15 g lemon juice
20 g egg yolks (1 egg yolk)
50 g butter
100 g Eis-Perfecto
45 g Perfecto-More
40 g cane sugar
15 g Bindemittel-Perfecto
15 g homemade vanilla paste
pinch of salt
Variant without sugar

80 g xylitol
15g XBindemittel-Perfecto

Ingredients that are later added to the ice cream:
300 g baked apple varigato

Preparation

Step 1:
Chop the apples into large pieces.
Step 2:
Mix all dry ingredients except the cane sugar.
Step 3:
Heat the butter in a saucepan until it turns brown. Please make sure that the butter does not burn!
Step 4:
Add the raw sugar and heat for 1 minute.
Step 5:
Add the apples and lemon juice, bring to the boil briefly and simmer for 10 minutes over medium heat, stirring occasionally, and then puree.
Step 6:
Now add the milk, egg yolk, condensed milk, vanilla paste and the remaining dry ingredients and mix everything together on the highest setting for 2 minutes.
Step 7:
Now bring everything to the boil briefly (ideally 85 ° C). Stir occasionally. Be careful not to burn it!
Step 8:
Cool down in a water bath.
Step 9:
Let the mix mature in the refrigerator for 60 minutes.
Step 10:
Freeze the ice with an ice cream maker or the hand method.
Step 11:
Now fill the finished ice cream in layers into a container and distribute it between each layer of baked apple varigato and if you like, carefully mix / swirl everything with a spoon at the end.
