Ingredients

130 g Eis-Perfecto
15 g Bindemittel-Perfecto
80 g cane sugar
20 g Swedish oat cookies
565 g milk 3,5%
180 g cream 30%
10 g nut butter (homemade)
1/4 tsp vanilla essence “Bourbon”
alternatively 5g vanilla paste
pinch of salt
Optional 5g Perfecto-Cremosa paste
Ingredients that are later added to the ice cream
150 g crunchy chocolate icing
90g chopped Swedish oat cookies
Variant without sugar
120 g Perfecto-X
15g XBindemittel-Perfecto
80 g xylitol
20 g Swedish oat cookies
565 g milk 3,5%
190 g cream 30%
10 g nut butter (homemade)
1/4 tsp vanilla essence “Bourbon”
alternatively 5g vanilla paste
pinch of salt
Optional 5g Perfecto-Cremosa paste

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, nut butter, oatmeal cookies, vanilla essence and the dry ingredients together at the highest setting for 2 minutes.
Step 3:
Now add the cream and mix again briefly.
Step 4:
Let the mix mature in the refrigerator for 60 minutes.
Step 5:
Now freeze the ice with an ice cream maker or the hand method
Step 6:
Shortly before the ice cream is ready, add the chopped oatmeal cookies and stir in briefly.
Step 7:

Now pour the finished ice cream into the freezer container in layers with the crunchy chocolate icing and stir the whole thing lightly every now and then when the chocolate has set a little.
Making nut butter
Step 1:
Cut butter into cubes and put them in a pot.
Step 2:
Heat the butter over medium heat on the stove until it begins to bubble and the egg whites collect on the surface.
Step 3:

Continue simmering the butter until it turns a light brown color. Be careful with the heat to avoid the butter getting too dark and burning. We definitely want to prevent that.
Step 4:
Strain the browned butter through a fine-mesh sieve.
Step 5:
Please keep in mind that you will need a little more butter than called for in the recipe to make the desired amount of nut butter. This is because the water contained in the butter evaporates during cooking.

Unfortunately the oatmeal cookie is awesome 😋 It's a shame that the vanilla essence masks the taste so much. Next time I would just use a touch of vanilla paste.
Don't you get the delicious ice cream with a higher biscuit content, dear ice cream man? 🤩

Thank you for your feedback. I don't think the vanilla content is too much. Maybe you used a little more than 1/2 teaspoon, and there are different sizes of teaspoons. To be on the safe side, I have now reduced the proportion to 1/4 teaspoon. I deliberately didn't put more cookies in the ice cream because they could have a negative effect on the texture due to the starch they contain. I have now increased the proportion a little so that the texture is good, but the ice cream has a little more aroma in terms of taste.
