Pancake ice cream with pancakes & blueberries. This is a recipe just to my taste! I, or my whole family, love Panckas with blue berries. Well ... it's obvious that I'll make an ice cream out of it. The ice cream is very rich and super creamy. It does exactly what the name promises.
For the ice cream you need ...
Pancakes

Cut the pancakes into cubes and soak the cubes in maple syrup. Then spread out on a plate (so that they don't stick together later) and freeze.
Mix all dry ingredients
Mix the milk, butter, vanilla paste, maple syrup, egg yolk and the dry ingredients and heat everything together while stirring constantly and let it steep for 10 minutes at c 85 ° C. Stir occasionally. Be careful not to burn it!
Let the ice cream mix in the refrigerator for at least 60 minutes.
Now freeze the ice with an ice cream maker or the hand method.
Just before the ice cream is ready, add the frozen pancakes cubes to the ice cream and mix in.
Now fill the finished ice cream in layers into a container and place between each layer of blueberryVariegato spread out

A nice ice cream, the many eggs makes it nice and creamy. Next time I would "drown" the pancakes a lot more in maple syrup, maybe they'll stay a little softer in the ice 😄
