Super delicious Milchschnitte ice cream

With this Milchschnitte ice cream, childhood memories are awakened. I have never been and still am a big milk loaf fan, but every now and then it tastes very tasty. Anyway, my kids love this sweet snack. I've had the idea for this ice cream in my head for a long time. But until now I haven't had the brain or the muse to implement this ice cream recipe. That was a big mistake, because the Milchschnitte ice cream turned out to be absolutely ingenious. Super creamy and the milk slice taste comes across as sensational. With a milk barVariegato

For the ice cream, we separate the soft cream from the biscuit and only add the cream to the ice cream mass. Otherwise the ice would turn brown and I didn't find it so attractive. Of course, the biscuit portion of the milk bar can simply be crumbled into the ice cream, but I wanted it with a little more finesse and creaminess. That's why I decided to do one Variegato to make from the biscuit portion. That was exactly the right approach, because it keeps the whole thing nice and creamy with the original milk wedge feeling.

A little more effort that is worth it!

Separating the cream from the biscuit is a bit more time-consuming, but it's worth it. Because the Milchschnitte ice cream is absolutely awesome. It doesn't look sensational in terms of appearance, it is also a stunner in terms of taste. Thanks to our Ice cream powder Perfecto we get a great creamy ice cream. Ingredients

110 g Eis-Perfecto
30 g Perfecto-More
15 g Bindemittel-Perfecto
40 g sugar
580 g milk 3,5%
140 g milk bar filling (from about 10 milk bars)
80 g Mascarpone
5 g vanilla paste
pinch of salt
3 g cremosa paste optional
Variant without sugar
100 g Perfecto-X
15g XBindemittel-Perfecto
70 g xylitol
580 g milk 3,5%

Ingredients that are later added to the ice cream
approx. 250 g milk barVariegato

30 g Variegato-Perfecto
30 g sugar
120 g milk bar biscuit (from about 10 milk bars)
65 g cream 30%
45 g milk 3,5%
Optionally some sugar couleur to color

Preparation

Step 1:
Mix all dry ingredients.
Step 2:
Mix the milk, mascarpone, milk wedge filling, vanilla paste and the dry ingredients together on the highest setting for 2 minutes.
Step 3:
Let the mix mature in the refrigerator for at least 60 minutes.
Step 4:
Freeze the ice with an ice cream maker or the hand method.
Step 5:

Now fill the finished ice cream in layers into a container and between each layer that Variegato spread and swirl gently with a spoon.
Preparation Variegato
Step 1:

Variegato and mix sugar.
Step 2:

Briefly boil both together with the sahen.
Step 3:

Add the milk biscuit and finely puree with a hand blender.

Let cool a little and then stir in the milk.
Step 4:

The Variegato let cool down. It should be used the same day.
Tip
Step 1:

The consistency should be Variegato be nice and creamy that it can be easily distributed in the ice cream. If it is too firm, just dilute it with a sip of milk! But please be economical so that it doesn't get too thin.

Tastes great like the Milchschnitte! I have to go on a little longer Variegato practice, that was too much for me and too tied, but the taste was top marks?
