For the ice cream you need a hazelnut paste, chocolate sauce and caramelized hazelnuts

Ingredients

675 g whole milk 3,5%
70 g Eis-Perfecto-More
65 g Eis-Perfecto
15 g binderPerfecto
20 g maple syrup
90 g hazelnut paste
65 g sugar
pinch of salt
Ingredients that are later added to the ice cream
150 g chocolate sauce
50 g caramelized hazelnuts chopped

Preparation

Step 1:
Mix all dry ingredients
Step 2:
Mix the milk, maple syrup, hazelnut paste and dry ingredients together on the highest setting for 2 minutes
Step 3:
Let the mix mature in the refrigerator for at least 60 minutes
Step 4:
Freeze the ice cream with an ice cream maker or the hand method and just before the ice cream is ready, add the caramelized hazelnuts and stir in
Step 5:
Now fill the finished ice cream in a white layer into a container and distribute it between each layer of chocolate sauce and if you like, carefully mix everything with a spoon at the end.

Do I really have to put maple syrup in the hazelnut ice cream?

To make the hazelnut ice cream good, you definitely need to add maple syrup. If you don’t have any or don’t want to use any, I recommend you just use the Nut ice cream basic recipe. It works the same but is made with maple syrup.
